Smoked Sausage and Rabbit Gumbo Recipe

Ingredients:
- 1 lb. smoked sausage, sliced into ½ inch pieces
- 1 lb. rabbit meat, cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 tablespoons all-purpose flour
- 4 cups chicken stock
- 1 green bell pepper, diced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon cayenne pepper
- 1 bay leaf
- 1 (14-ounce) can diced tomatoes
- 1 (14-ounce) can okra, drained
- Salt and pepper, to taste
- Cooked white rice, for serving
- Chopped fresh parsley, for garnish
Directions:
- Heat the oil in a large Dutch oven or stockpot over medium-high heat. Add the sausage and cook until lightly browned, about 5 minutes. Add the rabbit, onion, and garlic and cook, stirring, until the vegetables are softened, about 5 minutes.
- Stir in the flour and cook for 1 minute. Gradually whisk in the chicken stock and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, for 20 minutes.
- Add the bell pepper, paprika, thyme, cayenne, bay leaf, tomatoes, and okra and stir to combine. Simmer for 10 minutes, or until the rabbit is cooked through.
- Taste and season with salt and pepper, as desired. Serve the gumbo over cooked white rice and garnish with parsley.
