Smoky BBQ-Style Pot Roast with Baked Beans

Ingredients:

  • 1 3-4 lb. chuck roast
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can baked beans

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, combine ketchup, brown sugar, Worcestershire sauce, apple cider vinegar, chili powder, smoked paprika, garlic powder, onion powder, black pepper, and cayenne pepper (optional).
  3. Place the chuck roast in a large baking dish. Pour the sauce mixture over the roast and spread evenly. Add the diced onion and minced garlic to the baking dish.
  4. Cover the baking dish with a lid or aluminum foil and bake in the preheated oven for 2-3 hours or until the roast is tender and cooked through.
  5. After 2-3 hours, remove the lid or foil. Drain off and discard any excess fat from the baking dish.
  6. Add the can of baked beans to the baking dish and stir to combine.
  7. Cover and bake for an additional 30 minutes. Serve hot. Enjoy!
