Smoky BBQ-Style Pot Roast with Baked Beans

Ingredients:
- 1 3-4 lb. chuck roast
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup ketchup
- 1/4 cup brown sugar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons apple cider vinegar
- 2 tablespoons chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 can baked beans
Directions:
- Preheat oven to 350 degrees F.
- In a large bowl, combine ketchup, brown sugar, Worcestershire sauce, apple cider vinegar, chili powder, smoked paprika, garlic powder, onion powder, black pepper, and cayenne pepper (optional).
- Place the chuck roast in a large baking dish. Pour the sauce mixture over the roast and spread evenly. Add the diced onion and minced garlic to the baking dish.
- Cover the baking dish with a lid or aluminum foil and bake in the preheated oven for 2-3 hours or until the roast is tender and cooked through.
- After 2-3 hours, remove the lid or foil. Drain off and discard any excess fat from the baking dish.
- Add the can of baked beans to the baking dish and stir to combine.
- Cover and bake for an additional 30 minutes. Serve hot. Enjoy!
