– 2 large turkey necks, cut into 1-inch pieces

– 2 cloves garlic, minced

– 2 teaspoons smoked paprika
– 2 teaspoons dried oregano
– 1 teaspoon dried thyme
– 2 bay leaves
– 1 tablespoon cajun seasoning
– 6 cups chicken broth
– 1 (14.5 ounce) can diced tomatoes
– 1 (8 ounce) can tomato sauce
– 1 pound andouille sausage, sliced
– 1 red bell pepper, diced
– 1 green bell pepper, diced
– 1 cup white rice
– Salt and pepper to taste

Directions:

1. Heat the oil in a large pot over medium-high heat. Add the turkey necks and cook until lightly browned, about 5 minutes.

2. Add the onion, celery, and garlic and cook until softened, about 5 minutes.
