Ingredients:
- 2 tablespoons butter
- 1/2 cup water
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/2 cup canned pumpkin puree
- 2 tablespoons light brown sugar
- 1 teaspoon vanilla extract
- 2 tablespoons granulated sugar
- 1/4 teaspoon ground cinnamon
Directions:
- Preheat the oven to 375°F. Line a baking sheet with parchment paper.
- In a small saucepan, heat the butter and water until the butter has melted. Add the flour and stir until combined. Cook, stirring constantly, until the mixture forms a ball and leaves the sides of the pan, about 3 minutes.
- Transfer the dough to a bowl and let cool for 5 minutes. Add the eggs, one at a time, beating until fully incorporated.
- Drop the dough by heaping tablespoons onto the prepared baking sheet. Bake for 20-25 minutes, until golden brown and puffed.
- Meanwhile, in a medium bowl, mix together the cinnamon, nutmeg, cloves, ginger, pumpkin puree, light brown sugar, and vanilla extract. Set aside.
- In a small bowl, mix together the granulated sugar and ground cinnamon. Set aside.
- Once the puffs are done baking, let them cool for 5 minutes. Make a small hole in each puff and fill with the pumpkin mixture. Sprinkle with the cinnamon sugar mixture.
- Serve warm. Enjoy!
