Ingredients:

  • 2 tablespoons butter
  • 1/2 cup water
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/2 cup canned pumpkin puree
  • 2 tablespoons light brown sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon ground cinnamon

Directions:

  1. Preheat the oven to 375°F. Line a baking sheet with parchment paper.
  2. In a small saucepan, heat the butter and water until the butter has melted. Add the flour and stir until combined. Cook, stirring constantly, until the mixture forms a ball and leaves the sides of the pan, about 3 minutes.
  3. Transfer the dough to a bowl and let cool for 5 minutes. Add the eggs, one at a time, beating until fully incorporated.
  4. Drop the dough by heaping tablespoons onto the prepared baking sheet. Bake for 20-25 minutes, until golden brown and puffed.
