Spiced Sweet Potato and Chickpea Stew

Ingredients:

  • 3 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon red pepper flakes
  • 2 sweet potatoes, peeled and diced into 1-inch cubes
  • 1 (14 oz) can chickpeas, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups vegetable broth
  • 1/2 cup fresh cilantro, chopped
  • Salt and pepper, to taste

Directions:

  1. Heat the olive oil in a large pot over medium-high heat. Add the onion and bell pepper and cook, stirring occasionally, until softened, about 5 minutes.
  2. Add the garlic, cumin, paprika, oregano, coriander, and red pepper flakes and cook, stirring, for 1 minute.
  3. Add the sweet potatoes, chickpeas, diced tomatoes, and vegetable broth and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, for 20 minutes, or until the sweet potatoes are tender.
  4. Stir in the cilantro and season with salt and pepper, to taste.
  5. Let the stew cool for 10 minutes before serving.
  6. Garnish with additional cilantro and serve.
