Spiced Sweet Potato and Chickpea Stew
This easy and delicious spiced sweet potato and chickpea stew is the perfect vegan comfort food. Packed with nutritious ingredients, it’s a healthy and flavorful meal that will leave you feeling satisfied.
Ingredients:
- 3 tablespoons olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon ground coriander
- 1/4 teaspoon red pepper flakes
- 2 sweet potatoes, peeled and diced into 1-inch cubes
- 1 (14 oz) can chickpeas, drained and rinsed
- 1 (14.5 oz) can diced tomatoes
- 2 cups vegetable broth
- 1/2 cup fresh cilantro, chopped
- Salt and pepper, to taste
Directions:
- Heat the olive oil in a large pot over medium-high heat. Add the onion and bell pepper and cook, stirring occasionally, until softened, about 5 minutes.
- Add the garlic, cumin, paprika, oregano, coriander, and red pepper flakes and cook, stirring, for 1 minute.
- Add the sweet potatoes, chickpeas, diced tomatoes, and vegetable broth and bring to a boil. Reduce the heat to low and simmer, stirring occasionally, for 20 minutes, or until the sweet potatoes are tender.
- Stir in the cilantro and season with salt and pepper, to taste.
- Let the stew cool for 10 minutes before serving.
- Garnish with additional cilantro and serve.
