Spicy Buffalo Chicken Meatloaf
This Spicy Buffalo Chicken Meatloaf is a delicious dinner option for busy weeknights. Ingredients:
- 2 lbs. ground chicken
- 1/2 cup bread crumbs
- 1/4 cup onion, finely diced
- 2 cloves garlic, minced
- 1/4 cup buffalo sauce
- 1 egg
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 1 teaspoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
Directions:
- Preheat oven to 375°F.
- In a large bowl, combine ground chicken, bread crumbs, onion, garlic, egg, and buffalo sauce. Mix until everything is well combined.
- In a separate bowl, mix together ketchup, brown sugar, Worcestershire sauce, smoked paprika, garlic powder, and salt and pepper.
- Line a baking sheet with parchment paper. Form ground chicken mixture into a loaf and place it on the prepared baking sheet.
- Pour ketchup mixture over the top of the meatloaf and spread it evenly.
- Bake in preheated oven for 40-45 minutes, or until a meat thermometer inserted into the center reads 165°F.
- Let cool for 5 minutes before slicing and serving.
