Spicy Chicken Pad Thai

Ingredients:
- 1 package rice noodles
- 2 tablespoons vegetable oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 1 red bell pepper, diced
- 1 cup snow peas
- 1/4 cup fish sauce
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon chili flakes
- 1/4 cup lime juice
- 1/4 cup chopped peanuts
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Directions:
- Bring a large pot of water to a boil and add rice noodles. Cook noodles for about 6 minutes, or until al dente. Drain and set aside.
- In a large skillet, heat oil over medium-high heat. Add onion and garlic and cook for 1-2 minutes, stirring occasionally. Add chicken and cook for 3-4 minutes, stirring occasionally, until chicken is cooked through. Add bell pepper and snow peas and cook for an additional 2-3 minutes.
- In a small bowl, mix together fish sauce, soy sauce, brown sugar, chili flakes, lime juice, and salt and pepper. Pour sauce over chicken and vegetables and stir to combine. Cook for an additional 2-3 minutes, or until vegetables are tender and sauce is thickened.
- Add cooked noodles to skillet and stir to combine. Cook for an additional 2-3 minutes, stirring occasionally, until noodles are heated through.
- Serve pad thai with chopped peanuts, cilantro, and an additional squeeze of lime juice.
