Spicy Indian Masala Omelet with Herbs and Spices

Ingredients:
- 3 eggs
- 2 tablespoons oil
- 1/2 cup finely chopped onion
- 1/2 teaspoon garam masala
- 1/4 teaspoon ground turmeric
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon chili powder
- 2 tablespoons chopped fresh coriander leaves
- Salt to taste
Directions:
- In a medium bowl, whisk together the eggs, garam masala, turmeric, cumin, coriander, black pepper, chili powder, and salt. Set aside.
- Heat the oil in a large non-stick skillet over medium-high heat. Add the onion and cook until soft and golden, about 5 minutes.
- Add the egg mixture and stir to combine. Cook, stirring frequently, until the eggs are almost cooked through, about 8 minutes.
- Gently flip the omelet and cook for an additional 2 minutes.
- Top with the fresh coriander leaves and cook for 1 minute more.
