Spicy Jalapeño Beef Stroganoff

This delicious Spicy Jalapeño Beef Stroganoff is the perfect one-pot meal for a weeknight dinner. With beef, jalapeños, mushrooms, and a creamy sauce, this dish is sure to be a hit with the whole family.

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 jalapeños, seeded and diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon red pepper flakes
  • 8 ounces mushrooms, sliced
  • 3 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 cup sour cream
  • 1/4 cup chopped parsley, plus more for garnish
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Egg noodles, cooked (optional)

Directions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
  2. Add the onion and garlic and cook for another 3 minutes, stirring occasionally.
  3. Add the jalapeños, salt, pepper, oregano, paprika, cumin and red pepper flakes and cook for another minute.
  4. Add the mushrooms and cook for another 5 minutes, stirring occasionally.
  5. Add the flour and stir to coat the beef and vegetables. Cook for 2 minutes.
  6. Add the beef broth and bring to a boil. Reduce the heat to medium-low and simmer for 15 minutes, stirring occasionally.
  7. Add the sour cream, parsley and butter and stir to combine. Simmer for another 5 minutes.
  8. Taste and adjust salt and pepper, if desired. Serve over egg noodles, if desired, and garnish with additional parsley. Enjoy!
