Spicy Jalapeño Beef Stroganoff
This delicious Spicy Jalapeño Beef Stroganoff is the perfect one-pot meal for a weeknight dinner. With beef, jalapeños, mushrooms, and a creamy sauce, this dish is sure to be a hit with the whole family.
Ingredients:
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 jalapeños, seeded and diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon red pepper flakes
- 8 ounces mushrooms, sliced
- 3 tablespoons all-purpose flour
- 2 cups beef broth
- 1 cup sour cream
- 1/4 cup chopped parsley, plus more for garnish
- 2 tablespoons butter
- Salt and pepper, to taste
- Egg noodles, cooked (optional)
Directions:
- Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
- Add the onion and garlic and cook for another 3 minutes, stirring occasionally.
- Add the jalapeños, salt, pepper, oregano, paprika, cumin and red pepper flakes and cook for another minute.
- Add the mushrooms and cook for another 5 minutes, stirring occasionally.
- Add the flour and stir to coat the beef and vegetables. Cook for 2 minutes.
- Add the beef broth and bring to a boil. Reduce the heat to medium-low and simmer for 15 minutes, stirring occasionally.
- Add the sour cream, parsley and butter and stir to combine. Simmer for another 5 minutes.
- Taste and adjust salt and pepper, if desired. Serve over egg noodles, if desired, and garnish with additional parsley. Enjoy!
