Ingredients:
- 2 tablespoons olive oil
- 1 pound andouille sausage, diced
- 1 cup diced onion
- 1 cup diced celery
- 1 cup diced bell peppers
- 1/2 cup diced hot peppers
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups chicken stock
- 1 (14.5-ounce) can diced tomatoes
- 1/2 teaspoon cayenne pepper
- 2 teaspoons Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound fresh okra, sliced into 1/2-inch pieces
- 3 cups cooked white rice
- 1/4 cup chopped fresh parsley, for garnish
Directions:
- Heat the olive oil in a large pot over medium heat. Add the sausage and cook until lightly browned, about 5 minutes. Add the onion, celery, bell peppers, and hot peppers and cook until the vegetables are soft, about 8 minutes. Add the garlic and cook for another minute.
- Sprinkle the flour over the vegetables and stir to combine. Cook for another 2 minutes, stirring continuously. Add the chicken stock and stir to combine.
- Add the tomatoes, cayenne pepper, Cajun seasoning, salt, and black pepper. Stir to combine and bring the mixture to a boil. Reduce the heat to low and simmer for 15 minutes.
- Add the okra and cook for another 10 minutes. Adjust the seasoning to taste.
- Divide the cooked rice among 4 bowls and ladle the gumbo over the top. Garnish with the parsley.
- Serve the gumbo warm with crusty bread.
