Spicy Mexican Omelet with Chorizo, Jalapenos, and Queso Fresco

This delicious omelet is packed with Mexican flavors and some kick! It’s filled with juicy chorizo, spicy jalapenos, and creamy queso fresco. Perfect for breakfast, brunch, or even dinner, this omelet is sure to please.

Ingredients:

  • 6 eggs
  • 1/2 cup cooked chorizo
  • 1/2 cup diced jalapenos
  • 1/2 cup queso fresco
  • 1 tablespoon oil
  • Salt and pepper, to taste

Directions:

  1. In a medium bowl, whisk together eggs, salt, and pepper.
  2. Heat oil in a large skillet over medium heat. Add chorizo and jalapenos to the skillet and cook for 2-3 minutes or until chorizo is cooked through.
  3. Pour egg mixture into the skillet and let cook for 3-4 minutes, until the edges are set.
  4. Sprinkle queso fresco on top of the omelet and gently fold in half. Cook for an additional 2 minutes or until the cheese is melted and omelet is cooked through.
  5. Gently slide the omelet onto a plate and serve warm.
  6. Garnish with extra queso fresco, cilantro, and diced jalapenos, if desired.
