Spicy Moroccan Chickpea and Spinach Soup

Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1 (14.5 ounce) can fire-roasted diced tomatoes
- 1 (15.5 ounce) can chickpeas, drained and rinsed
- 1 quart vegetable broth
- 1 cup water
- 1/2 teaspoon salt
- 1 (5 ounce) package baby spinach leaves
- Fresh cilantro, for garnish
Directions:
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic and cook until softened, about 5 minutes.
- Add cumin, coriander, ginger, turmeric, paprika, and cayenne pepper and stir to combine.
- Add tomatoes, chickpeas, vegetable broth, water, and salt and stir to combine.

- Add spinach and cook for an additional 5 minutes.
