Spicy Oyster and Bacon Gumbo Recipe

This delicious and easy to make Spicy Oyster and Bacon Gumbo combines fragrant cajun spices with the smoky flavors of bacon and the briny flavors of fresh oysters to create a flavorful and unique gumbo.

Ingredients:

  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • 1/4 cup bacon, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 celery stalks, diced
  • 1 green bell pepper, diced
  • 2 teaspoons cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 4 cups chicken broth
  • 1/2 cup white wine
  • 2 bay leaves
  • 1 pound oysters, shucked and drained
  • 1/4 cup parsley, chopped

Directions:

  1. Heat the oil in a large pot over medium-high heat.
  2. Add the flour and bacon and cook, stirring constantly, until the flour is lightly browned, about 4 minutes.
  3. Add the onion, garlic, celery, and bell pepper and cook until softened, about 5 minutes.
  4. Add the cajun seasoning, smoked paprika, and cayenne pepper and stir to combine.
  5. Add the chicken broth, white wine, and bay leaves and bring to a boil.
  6. Reduce the heat to low and simmer for 30 minutes.
  7. Add the oysters and cook until they are just cooked through, about 5 minutes.
  8. Stir in the parsley and serve hot with cooked rice.
