Spicy Sweet Potato and Spinach Curry
This flavorful and comforting vegan curry is the perfect meal for a chilly night! Made with sweet potatoes, spinach, and a variety of spices, this curry is sure to warm you up and satisfy your taste buds.
Ingredients:
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper, or to taste
- 1 cup vegetable broth
- 2 large sweet potatoes, peeled and cubed
- 1 (14-ounce) can diced tomatoes
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 cup frozen spinach, thawed and drained
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
Directions:
- Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the cumin, coriander, garam masala, turmeric, ginger, and cayenne pepper and cook for another minute.
- Add the vegetable broth, sweet potatoes, tomatoes, chickpeas, and spinach. Bring to a boil, reduce heat, and simmer for 20 minutes, or until the sweet potatoes are tender.
- Season with salt and pepper to taste.
- Stir in the cilantro and serve.
- Garnish with a dollop of Greek yogurt or a sprinkle of red pepper flakes, if desired.
