Spicy Sweet Potato and Spinach Curry

This flavorful and comforting vegan curry is the perfect meal for a chilly night! Made with sweet potatoes, spinach, and a variety of spices, this curry is sure to warm you up and satisfy your taste buds.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper, or to taste
  • 1 cup vegetable broth
  • 2 large sweet potatoes, peeled and cubed
  • 1 (14-ounce) can diced tomatoes
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 cup frozen spinach, thawed and drained
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro

Directions:

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the cumin, coriander, garam masala, turmeric, ginger, and cayenne pepper and cook for another minute.
  3. Add the vegetable broth, sweet potatoes, tomatoes, chickpeas, and spinach. Bring to a boil, reduce heat, and simmer for 20 minutes, or until the sweet potatoes are tender.
  4. Season with salt and pepper to taste.
  5. Stir in the cilantro and serve.
  6. Garnish with a dollop of Greek yogurt or a sprinkle of red pepper flakes, if desired.
