Spicy Venison and Butternut Squash Chili

Ingredients:

  • 1 lb ground venison
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 cup butternut squash, diced
  • 1 cup vegetable broth
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges, for serving
  • Shredded cheese, for serving
  • Sour cream, for serving

Directions:

  1. Heat the olive oil in a large pot over medium-high heat. Add the ground venison and onion to the pot and cook, breaking the venison into small pieces, until the venison is cooked through, about 7 minutes.
  2. Add the garlic, chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper to the pot. Stir to combine and cook for 1 minute.
  3. Add the diced tomatoes with their juices, black beans, kidney beans, butternut squash, and vegetable broth to the pot. Stir to combine.
  4. Bring the chili to a low boil, then reduce the heat to low and let simmer for 15 minutes, stirring occasionally.
  5. Add the fresh cilantro to the chili and stir to combine. Taste the chili and adjust the seasonings as desired.
  6. Serve the chili with lime wedges, shredded cheese, and sour cream.
