Spicy Venison and Butternut Squash Chili
This hearty and flavorful chili is the perfect winter warmup. A combination of venison and butternut squash, this chili is packed with healthy ingredients and makes a great one pot meal. Ingredients:
- 1 lb ground venison
- 1 tablespoon olive oil
- 1 large onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 cup butternut squash, diced
- 1 cup vegetable broth
- 1/4 cup fresh cilantro, chopped
- Lime wedges, for serving
- Shredded cheese, for serving
- Sour cream, for serving
Directions:
- Heat the olive oil in a large pot over medium-high heat. Add the ground venison and onion to the pot and cook, breaking the venison into small pieces, until the venison is cooked through, about 7 minutes.
- Add the garlic, chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper to the pot. Stir to combine and cook for 1 minute.
- Add the diced tomatoes with their juices, black beans, kidney beans, butternut squash, and vegetable broth to the pot. Stir to combine.
- Bring the chili to a low boil, then reduce the heat to low and let simmer for 15 minutes, stirring occasionally.
- Add the fresh cilantro to the chili and stir to combine. Taste the chili and adjust the seasonings as desired.
- Serve the chili with lime wedges, shredded cheese, and sour cream.
