Ingredients:

  • 16 large sea scallops
  • 8 slices of bacon
  • 2 cups baby spinach
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Rinse the scallops and pat them dry with a paper towel.
  3. Wrap each scallop with a slice of bacon and secure with a toothpick.
  4. In a large skillet over medium heat, melt the butter and add the minced garlic.
  5. Add the spinach to the skillet and cook until wilted, about 2-3 minutes.
  6. Remove the spinach from the skillet and set aside.
  7. Add the olive oil to the same skillet and heat over medium-high heat.
  8. Add the bacon-wrapped scallops to the skillet and cook for 2-3 minutes on each side, or until the bacon is crispy and the scallops are golden brown.
  9. Transfer the scallops to a baking sheet and bake for 5-7 minutes, or until the scallops are cooked through.
  10. Serve the scallops hot, garnished with the sautéed spinach and lemon wedges.
