Ingredients:
- 16 large sea scallops
- 8 slices of bacon
- 2 cups baby spinach
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic, minced
- Salt and pepper to taste
- Lemon wedges for serving
Instructions:
- Preheat the oven to 425°F (220°C).
- Rinse the scallops and pat them dry with a paper towel.
- Wrap each scallop with a slice of bacon and secure with a toothpick.
- In a large skillet over medium heat, melt the butter and add the minced garlic.
- Add the spinach to the skillet and cook until wilted, about 2-3 minutes.
- Remove the spinach from the skillet and set aside.
- Add the olive oil to the same skillet and heat over medium-high heat.
- Add the bacon-wrapped scallops to the skillet and cook for 2-3 minutes on each side, or until the bacon is crispy and the scallops are golden brown.
- Transfer the scallops to a baking sheet and bake for 5-7 minutes, or until the scallops are cooked through.
- Serve the scallops hot, garnished with the sautéed spinach and lemon wedges.
