Ingredients:

  • 4 medium sweet potatoes
  • 2 cups baby spinach, chopped
  • 4 ounces goat cheese, crumbled (supplement for vegan feta for vegan option)
  • 1/4 cup chopped walnuts
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the sweet potatoes and pierce them several times with a fork.
  3. Place the sweet potatoes on a baking sheet and bake for 45-50 minutes, or until tender.
  4. While the sweet potatoes are baking, in a medium bowl, combine the chopped spinach, crumbled goat cheese, chopped walnuts, olive oil, salt, and pepper.
  5. Mix well and set aside.
  6. When the sweet potatoes are done, let them cool for a few minutes, then slice them lengthwise and gently scoop out some of the flesh to create a cavity.
  7. Fill each sweet potato cavity with the spinach and goat cheese mixture.
  8. Return the stuffed sweet potatoes to the oven and bake for another 10-15 minutes, or until the filling is heated through and the cheese is melted and bubbly.
  9. Serve hot, garnished with additional chopped walnuts if desired.
