Ingredients:
- 4 medium sweet potatoes
- 2 cups baby spinach, chopped
- 4 ounces goat cheese, crumbled (supplement for vegan feta for vegan option)
- 1/4 cup chopped walnuts
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- Scrub the sweet potatoes and pierce them several times with a fork.
- Place the sweet potatoes on a baking sheet and bake for 45-50 minutes, or until tender.
- While the sweet potatoes are baking, in a medium bowl, combine the chopped spinach, crumbled goat cheese, chopped walnuts, olive oil, salt, and pepper.
- Mix well and set aside.
- When the sweet potatoes are done, let them cool for a few minutes, then slice them lengthwise and gently scoop out some of the flesh to create a cavity.
