Springtime Pasta Primavera Recipe

Ingredients:

  • 1 lb. pasta of your choice
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup diced carrots
  • 1 cup diced bell peppers
  • 1 cup diced zucchini
  • 1 cup frozen green peas
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup vegetable broth
  • 1/4 cup heavy cream
  • 1/4 cup freshly grated Parmesan cheese

Directions:

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Drain and set aside.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 2 minutes.
  3. Add the carrots, bell peppers, zucchini, green peas, thyme, oregano, basil, salt, and pepper. Cook until the vegetables are tender, about 5 minutes.
  4. Add the vegetable broth and bring to a simmer. Cook until the broth is reduced by half, about 5 minutes.
  5. Stir in the cream and Parmesan cheese and cook until the sauce is thickened, about 2 minutes.
  6. Add the cooked pasta to the skillet and toss to combine. Serve warm.
