Springtime Pasta Primavera Recipe

Ingredients:
- 1 lb. pasta of your choice
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup diced carrots
- 1 cup diced bell peppers
- 1 cup diced zucchini
- 1 cup frozen green peas
- 1/2 teaspoon dried thyme
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup vegetable broth
- 1/4 cup heavy cream
- 1/4 cup freshly grated Parmesan cheese
Directions:
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions. Drain and set aside.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 2 minutes.
- Add the carrots, bell peppers, zucchini, green peas, thyme, oregano, basil, salt, and pepper. Cook until the vegetables are tender, about 5 minutes.
- Add the vegetable broth and bring to a simmer. Cook until the broth is reduced by half, about 5 minutes.
- Stir in the cream and Parmesan cheese and cook until the sauce is thickened, about 2 minutes.
- Add the cooked pasta to the skillet and toss to combine. Serve warm.
