Ingredients:
- 2 tablespoons olive oil
- 1 onion, sliced
- 2 pounds stew beef, cubed
- 2 cloves garlic, minced
- 1 cup stout beer
- 2 tablespoons flour
- 1 tablespoon Worcestershire sauce
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 1 cup beef broth
- 1/4 cup sour cream
- 1/4 cup chopped parsley
- Salt, to taste
- Egg noodles, for serving
Directions:
- Heat the olive oil in a large skillet over medium-high heat. Add the onion and sauté until golden, about 5 minutes. Transfer to a plate and set aside.
- Add the beef cubes to the skillet and season with salt and pepper. Cook, stirring occasionally, until the beef is browned, about 5 minutes. Add the garlic and cook for 1 minute.
- Pour in the stout and bring to a simmer. Add the flour and stir until the mixture thickens, about 2 minutes.
- Stir in the Worcestershire sauce, paprika, pepper, and thyme. Add the beef broth and bring to a simmer. Cover and reduce the heat to low. Simmer for 30 minutes, stirring occasionally.
- Uncover and stir in the sour cream and parsley. Simmer for an additional 5-10 minutes, until the sauce is thick and creamy.
- Taste and adjust the seasoning with salt, if needed. Serve over egg noodles.
- Garnish with the caramelized onions and additional parsley, if desired.
