Ingredients:

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 4 tablespoons unsalted butter, melted
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 2/3 cup cream cheese, softened
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, sliced
  • 1/4 cup confectioners’ sugar

Directions:

  1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together flour, baking powder, and salt. In a medium bowl, whisk together melted butter, eggs, and water.
  3. Pour the wet ingredients into the dry ingredients and mix until well combined. With a spoon, drop eight mounds of dough onto the prepared baking sheet, about 3 inches apart.
  4. Using your fingers, flatten the mounds of dough to form eclairs. Make sure to leave some space for the pastry to expand during baking.
  5. Bake for 18-20 minutes, or until golden brown. Remove from oven and let cool.
  6. In a medium bowl, beat together cream cheese, sugar, and vanilla until light and fluffy. Spoon the cream cheese mixture into a pastry bag fitted with a large star tip.
  7. Pipe the cream cheese mixture into each cooled eclair, filling them to the top. Place sliced strawberries on top of the cream cheese filling.
