Ingredients:
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 4 tablespoons unsalted butter, melted
- 2 large eggs
- 1/4 teaspoon salt
- 1/4 cup water
- 2/3 cup cream cheese, softened
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1/2 cup fresh strawberries, sliced
- 1/4 cup confectioners’ sugar
Directions:
- Preheat oven to 375°F. Line a baking sheet with parchment paper.
- In a small bowl, whisk together flour, baking powder, and salt. In a medium bowl, whisk together melted butter, eggs, and water.
- Pour the wet ingredients into the dry ingredients and mix until well combined. With a spoon, drop eight mounds of dough onto the prepared baking sheet, about 3 inches apart.
- Using your fingers, flatten the mounds of dough to form eclairs. Make sure to leave some space for the pastry to expand during baking.
- Bake for 18-20 minutes, or until golden brown. Remove from oven and let cool.
- In a medium bowl, beat together cream cheese, sugar, and vanilla until light and fluffy. Spoon the cream cheese mixture into a pastry bag fitted with a large star tip.
- Pipe the cream cheese mixture into each cooled eclair, filling them to the top. Place sliced strawberries on top of the cream cheese filling.
- Dust the eclairs with confectioners’ sugar, and serve. Enjoy!
