Streusel-Topped Banana Bread

This Streusel-Topped Banana Bread is a delicious and easy to make treat that is perfect for a special occasion or just to treat yourself. Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup rolled oats
  • 1/4 cup light brown sugar
  • 2 tablespoons melted butter

Directions:

  1. Preheat oven to 350°F. Grease a 9×5 inch loaf pan and set aside.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat together butter and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Fold in mashed bananas. Gradually add in dry ingredients and mix until just combined. Stir in walnuts, if using.
  5. In a small bowl, mix together rolled oats, brown sugar, and melted butter. Spread half of the batter in the prepared pan, then sprinkle with streusel topping. Top with remaining batter.
  6. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
