Streusel-Topped Banana Bread
This Streusel-Topped Banana Bread is a delicious and easy to make treat that is perfect for a special occasion or just to treat yourself. Ingredients:
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- 1/2 cup chopped walnuts (optional)
- 1/2 cup rolled oats
- 1/4 cup light brown sugar
- 2 tablespoons melted butter
Directions:
- Preheat oven to 350°F. Grease a 9×5 inch loaf pan and set aside.
- In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, beat together butter and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
- Fold in mashed bananas. Gradually add in dry ingredients and mix until just combined. Stir in walnuts, if using.
- In a small bowl, mix together rolled oats, brown sugar, and melted butter. Spread half of the batter in the prepared pan, then sprinkle with streusel topping. Top with remaining batter.
- Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
