Stuffed Spinach and Artichoke Meatloaf
This Stuffed Spinach and Artichoke Meatloaf is a delicious and healthy dinner. A combination of spinach, artichoke, and ground beef creates a flavorful and juicy meatloaf that is sure to please.
Ingredients:
- 1 lb ground beef
- 1/2 cup bread crumbs
- 1/2 cup onion, diced
- 1/2 cup spinach, chopped
- 1/2 cup artichoke hearts, diced
- 1/2 cup parmesan cheese, grated
- 2 eggs, lightly beaten
- 1 teaspoon garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Directions:
- Preheat oven to 350 degrees F.
- In a large bowl, mix together the ground beef, bread crumbs, onion, spinach, artichoke hearts, parmesan cheese, eggs, garlic, Italian seasoning, salt and pepper.
- Form the mixture into a loaf shape and place in a 9×5 inch loaf pan.
- Bake for 40 minutes, then remove from oven and let cool.
- Mix together the minced garlic, Italian seasoning, salt and pepper in a small bowl.
- Spread the seasoning mixture over the top of the meatloaf.
- Return the meatloaf to the oven and bake for an additional 10 minutes.
- Remove from oven and let cool for 10 minutes before serving.
