Stuffed Spinach and Artichoke Meatloaf

This Stuffed Spinach and Artichoke Meatloaf is a delicious and healthy dinner. A combination of spinach, artichoke, and ground beef creates a flavorful and juicy meatloaf that is sure to please.

Ingredients:

  • 1 lb ground beef
  • 1/2 cup bread crumbs
  • 1/2 cup onion, diced
  • 1/2 cup spinach, chopped
  • 1/2 cup artichoke hearts, diced
  • 1/2 cup parmesan cheese, grated
  • 2 eggs, lightly beaten
  • 1 teaspoon garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, mix together the ground beef, bread crumbs, onion, spinach, artichoke hearts, parmesan cheese, eggs, garlic, Italian seasoning, salt and pepper.
  3. Form the mixture into a loaf shape and place in a 9×5 inch loaf pan.
  4. Bake for 40 minutes, then remove from oven and let cool.
  5. Mix together the minced garlic, Italian seasoning, salt and pepper in a small bowl.
  6. Spread the seasoning mixture over the top of the meatloaf.
  7. Return the meatloaf to the oven and bake for an additional 10 minutes.
  8. Remove from oven and let cool for 10 minutes before serving.
