Sundried Tomato and Goat Cheese Macaroni and Cheese Recipe

Ingredients:

  • 1 lb elbow macaroni
  • 4 cups of milk
  • 3 tablespoons of butter
  • 3/4 cup of sundried tomatoes, chopped
  • 2 teaspoons of garlic powder
  • 2 teaspoons of onion powder
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of dried oregano
  • 1/4 teaspoon of red pepper flakes, optional
  • 3 cups of shredded mozzarella cheese
  • 1/2 cup of grated Parmesan cheese
  • 4 ounces of goat cheese, crumbled

Directions:

  1. Preheat oven to 350 degrees. Grease a 9×13 inch baking dish.
  2. Bring a large pot of salted water to a boil. Cook the macaroni for 8 minutes, or until al dente. Drain and set aside.
  3. In a large saucepan, melt the butter over medium heat. Whisk in the garlic powder, onion powder, salt, pepper, oregano, and red pepper flakes (if using). Let cook for 1 minute.
  4. Whisk in the milk and sundried tomatoes. Let cook until bubbling and thickened, about 7 minutes.
  5. Add the mozzarella cheese, Parmesan cheese, and goat cheese, stirring until melted. Turn off the heat.
  6. Add the cooked macaroni to the cheese sauce and stir until combined. Pour the macaroni and cheese into the prepared baking dish.
  7. Bake for 25 minutes, or until golden brown and bubbling. Let cool for 10 minutes before serving. Enjoy!
