Sundried Tomato Spaghetti Bolognese Recipe

This delicious and healthy Sundried Tomato Spaghetti Bolognese is a vegetarian twist on the classic Italian dish. It’s packed full of flavor thanks to the sundried tomatoes, garlic, and herbs, and is sure to be a hit with the whole family!

Ingredients:

  • 1 Tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1/2 cup sundried tomatoes, chopped
  • 1/2 cup vegetable broth
  • 1 can diced tomatoes
  • 1/4 cup tomato paste
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1/2 lb spaghetti
  • 1/4 cup grated Parmesan cheese

Directions:

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion, garlic, and bell pepper and cook until softened, about 5 minutes.
  2. Add the sundried tomatoes, vegetable broth, diced tomatoes, tomato paste, oregano, basil, and thyme. Bring to a simmer and cook until the flavors have combined, about 10 minutes.
  3. Season with salt and pepper, to taste.
  4. Meanwhile, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions.
  5. Drain the spaghetti and add it to the saucepan with the sauce. Cook until heated through, about 5 minutes.
  6. Serve the spaghetti bolognese with grated Parmesan cheese.
