Sundried Tomato Spaghetti Bolognese Recipe
This delicious and healthy Sundried Tomato Spaghetti Bolognese is a vegetarian twist on the classic Italian dish. It’s packed full of flavor thanks to the sundried tomatoes, garlic, and herbs, and is sure to be a hit with the whole family!
Ingredients:
- 1 Tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1/2 cup sundried tomatoes, chopped
- 1/2 cup vegetable broth
- 1 can diced tomatoes
- 1/4 cup tomato paste
- 2 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- Salt and pepper, to taste
- 1/2 lb spaghetti
- 1/4 cup grated Parmesan cheese
Directions:
- Heat the olive oil in a large saucepan over medium heat. Add the onion, garlic, and bell pepper and cook until softened, about 5 minutes.
- Add the sundried tomatoes, vegetable broth, diced tomatoes, tomato paste, oregano, basil, and thyme. Bring to a simmer and cook until the flavors have combined, about 10 minutes.
- Season with salt and pepper, to taste.
- Meanwhile, bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions.
- Drain the spaghetti and add it to the saucepan with the sauce. Cook until heated through, about 5 minutes.
- Serve the spaghetti bolognese with grated Parmesan cheese.
