Tarragon-Infused Asparagus and Green Pea Soup

Ingredients:

  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 cups asparagus, chopped
  • 1 teaspoon dried tarragon
  • 1 cup frozen green peas
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/4 cup heavy cream

Directions:

  1. Melt butter in a large pot over medium heat. Add onion and garlic and cook until onion is softened, about 5 minutes.
  2. Add vegetable broth, asparagus, tarragon, and peas. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
  3. Stir in salt and pepper. Remove from heat and let cool for 10 minutes.
  4. Transfer soup to a blender or food processor and blend until smooth. Return the soup to the pot and heat over medium heat until warmed through.
  5. Stir in cream and let simmer for 5 minutes.
  6. Serve immediately or transfer to a container and refrigerate for up to 3 days.
