Tarragon-Infused Asparagus and Green Pea Soup
This delicious and healthy soup is a vegetarian delight! The combination of tarragon-infused asparagus and green peas makes for a savory and flavorful soup that can be enjoyed any time of the year. Serve it with crusty bread or use it as a starter for a special meal.
Ingredients:
- 2 tablespoons butter
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups vegetable broth
- 2 cups asparagus, chopped
- 1 teaspoon dried tarragon
- 1 cup frozen green peas
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- 1/4 cup heavy cream
Directions:
- Melt butter in a large pot over medium heat. Add onion and garlic and cook until onion is softened, about 5 minutes.
- Add vegetable broth, asparagus, tarragon, and peas. Bring to a boil, then reduce heat to low and simmer for 15 minutes.
- Stir in salt and pepper. Remove from heat and let cool for 10 minutes.
- Transfer soup to a blender or food processor and blend until smooth. Return the soup to the pot and heat over medium heat until warmed through.
- Stir in cream and let simmer for 5 minutes.
- Serve immediately or transfer to a container and refrigerate for up to 3 days.
