Ingredients:

  • 9 lasagne sheets
  • 500g ground beef
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 can (400g) diced tomatoes
  • 1 can (400g) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 200g grated cheddar cheese
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. In a large pan, cook the ground beef over medium heat until browned. Add the diced onion, bell pepper, and garlic, and sauté until the vegetables are softened.
  3. Stir in the diced tomatoes, black beans, frozen corn, chili powder, cumin, salt, and pepper. Simmer for 10 minutes.
  4. In a greased baking dish, layer 3 lasagne sheets, followed by a third of the meat mixture, and a third of the grated cheddar cheese. Repeat this process for two more layers.
  5. Cover the baking dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  6. Let the lasagne cool for a few minutes before serving. Garnish with fresh cilantro and enjoy the Tex-Mex twist on this classic dish!
