Ingredients:
- 9 lasagne sheets
- 500g ground beef
- 1 onion, diced
- 1 red bell pepper, diced
- 2 cloves of garlic, minced
- 1 can (400g) diced tomatoes
- 1 can (400g) black beans, drained and rinsed
- 1 cup frozen corn kernels
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 200g grated cheddar cheese
- Fresh cilantro, chopped (for garnish)
Instructions:
- Preheat the oven to 180°C (350°F).
- In a large pan, cook the ground beef over medium heat until browned. Add the diced onion, bell pepper, and garlic, and sauté until the vegetables are softened.
- Stir in the diced tomatoes, black beans, frozen corn, chili powder, cumin, salt, and pepper. Simmer for 10 minutes.
- In a greased baking dish, layer 3 lasagne sheets, followed by a third of the meat mixture, and a third of the grated cheddar cheese. Repeat this process for two more layers.
- Cover the baking dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Let the lasagne cool for a few minutes before serving. Garnish with fresh cilantro and enjoy the Tex-Mex twist on this classic dish!
