Ingredients:

  • 1 lb beef sirloin, sliced into thin strips
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 1/2 cup beef broth
  • 1/2 cup coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp fresh lime juice
  • Salt and pepper, to taste
  • 2 tbsp oil for cooking

Instructions:

  1. Heat oil in a large skillet over medium-high heat. Add beef strips and cook until browned. Remove beef from skillet and set aside.
  2. In the same skillet, add onions, garlic, and mushrooms. Cook until onions are translucent and mushrooms are tender.
  3. Add beef broth, coconut milk, red curry paste, and lime juice. Bring to a simmer and cook for 5-7 minutes.
  4. Return beef to the skillet and mix well. Add salt and pepper to taste.
  5. Reduce heat to low and let simmer for an additional 5 minutes.
  6. Serve over cooked rice or with naan bread.
