Ingredients:
- 1 lb beef sirloin, sliced into thin strips
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup sliced mushrooms
- 1/2 cup beef broth
- 1/2 cup coconut milk
- 2 tbsp red curry paste
- 1 tbsp fresh lime juice
- Salt and pepper, to taste
- 2 tbsp oil for cooking
Instructions:
- Heat oil in a large skillet over medium-high heat. Add beef strips and cook until browned. Remove beef from skillet and set aside.
- In the same skillet, add onions, garlic, and mushrooms. Cook until onions are translucent and mushrooms are tender.
- Add beef broth, coconut milk, red curry paste, and lime juice. Bring to a simmer and cook for 5-7 minutes.
- Return beef to the skillet and mix well. Add salt and pepper to taste.
- Reduce heat to low and let simmer for an additional 5 minutes.
- Serve over cooked rice or with naan bread.
