Thanksgiving Leftover Turkey and Sausage Gumbo
This delicious gumbo is a great way to use up Thanksgiving leftovers. Made with turkey, sausage, and a variety of herbs and spices, this gumbo is sure to be a hit with the whole family!
Ingredients:
- 1 tablespoon vegetable oil
- 1 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced green bell pepper
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 2 cups diced cooked turkey
- 1/2 pound cooked sausage, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 2 bay leaves
- 2 tablespoons Worcestershire sauce
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
- 1/4 cup chopped fresh parsley
- Hot cooked rice, for serving
Directions:
- Heat the oil in a large pot over medium heat. Add the onion, celery, and bell pepper and cook, stirring occasionally, until softened, about 5 minutes.
- Stir in the flour and cook for 1 minute. Gradually whisk in the chicken broth and cook, stirring constantly, until the mixture starts to thicken. Add the turkey, sausage, thyme, oregano, garlic powder, bay leaves, Worcestershire sauce, cayenne pepper, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes, stirring occasionally.
- Remove the bay leaves and stir in the parsley. Taste and adjust the seasoning as needed.
- Serve the gumbo hot over cooked rice.
