This fresh and flavorful quiche features ripe tomatoes, fresh basil, and a creamy egg custard.

Ingredients:

  • 1 9-inch pie crust
  • 1 large tomato, sliced
  • 1/4 cup chopped fresh basil
  • 1 cup shredded mozzarella cheese
  • 4 eggs
  • 1 1/2 cups heavy cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Sprinkle the mozzarella cheese evenly over the bottom of the pie crust.
  3. Layer the tomato slices on top of the cheese.
  4. Sprinkle the chopped basil over the tomatoes.
  5. In a large bowl, whisk together the eggs, heavy cream, salt, and pepper.
  6. Pour the egg mixture over the tomatoes and basil.
  7. Bake for 35-40 minutes, or until the center is set and the top is golden brown.
  8. Let cool for a few minutes before slicing and serving.
