Tomato and Shrimp Okra Gumbo
This Southern classic comfort food is a delicious combination of tomatoes, shrimp, okra and spices. The perfect hearty meal to warm you up on a cold winter night.
Ingredients:
- 3 tablespoons olive oil
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced red bell pepper
- 3 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons all-purpose flour
- 1 (14.5 ounce) can diced tomatoes
- 1/2 cup chicken broth
- 1/2 cup white wine
- 1 pound medium shrimp, peeled and deveined
- 1/2 pound okra, sliced
- 1/2 cup chopped fresh parsley
- 2 tablespoons freshly squeezed lemon juice
- Cooked white rice, for serving
Directions:
- Heat the olive oil in a large pot over medium heat. Add the onion, celery, bell pepper, garlic, Cajun seasoning, salt, and pepper and cook for 5 minutes, stirring occasionally, until the vegetables are softened.
- Stir in the flour and cook, stirring constantly, for 1 minute.
- Add the tomatoes, chicken broth, and white wine and bring to a simmer. Cook for 5 minutes.
- Add the shrimp and okra and cook for 5 minutes, until the shrimp are cooked through.
- Stir in the parsley and lemon juice. Taste and adjust seasonings if necessary.
- Serve over cooked white rice.
