Tomato and Shrimp Okra Gumbo

This Southern classic comfort food is a delicious combination of tomatoes, shrimp, okra and spices. The perfect hearty meal to warm you up on a cold winter night.

Ingredients:

  • 3 tablespoons olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 1 (14.5 ounce) can diced tomatoes
  • 1/2 cup chicken broth
  • 1/2 cup white wine
  • 1 pound medium shrimp, peeled and deveined
  • 1/2 pound okra, sliced
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons freshly squeezed lemon juice
  • Cooked white rice, for serving

Directions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion, celery, bell pepper, garlic, Cajun seasoning, salt, and pepper and cook for 5 minutes, stirring occasionally, until the vegetables are softened.
  2. Stir in the flour and cook, stirring constantly, for 1 minute.
  3. Add the tomatoes, chicken broth, and white wine and bring to a simmer. Cook for 5 minutes.
  4. Add the shrimp and okra and cook for 5 minutes, until the shrimp are cooked through.
  5. Stir in the parsley and lemon juice. Taste and adjust seasonings if necessary.
  6. Serve over cooked white rice.
