Tomato Basil Caprese Macaroni and Cheese

This delicious macaroni and cheese recipe combines the classic flavors of tomato and basil with creamy mozzarella cheese for a unique and flavorful meal. The combination of the tomato, basil, and mozzarella cheese will make this a hit with the whole family!

Ingredients:

  • 2 cups elbow macaroni
  • 1 tablespoon olive oil
  • 1 cup diced tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh basil
  • 1/2 teaspoon dried oregano
  • salt and pepper to taste
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cook the macaroni according to package instructions. Drain and set aside.
  3. In a large skillet over medium heat, heat olive oil. Add tomatoes, garlic, basil, oregano, salt, and pepper, and cook for about 5 minutes, stirring frequently, until tomatoes are softened.
  4. Add the cream and bring to a simmer. Lower the heat and simmer for about 5 minutes, stirring occasionally, until sauce has thickened.
  5. Add the cooked macaroni and stir to combine. Add mozzarella cheese and stir until cheese is melted and sauce is creamy.
  6. Transfer the macaroni and cheese to a 9×13 inch baking dish and spread evenly.
  7. Bake in preheated oven for 20 minutes, or until cheese is melted and bubbling. Serve hot.
