This turkey meatloaf recipe is flavorful and moist with a tangy cranberry glaze. Perfect for a family dinner or special occasion.
Ingredients:
- 2 lbs ground turkey
- 1 cup breadcrumbs
- 2 eggs
- 1/2 cup diced onion
- 1/4 cup diced celery
- 1/4 cup dried cranberries
- 1/4 cup chopped fresh parsley
- 1 tsp dried thyme
- Salt and pepper to taste
Cranberry Glaze:
- 1/2 cup cranberry sauce
- 1/4 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
Instructions:
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine ground turkey, breadcrumbs, eggs, onion, celery, cranberries, parsley, thyme, salt, and pepper.
- Mix until well combined and shape into a loaf.
- In a separate bowl, whisk together cranberry sauce, ketchup, brown sugar, and apple cider vinegar to make the glaze.
- Pour half of the glaze over the meatloaf and spread it evenly.
- Bake in the preheated oven for 45-50 minutes or until fully cooked.
- Remove from the oven and let rest for 5 minutes before slicing.
