Ingredients:
- 1 tablespoon olive oil
- 1 lb ground turkey
- 1 small onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried rosemary
- 3 large sweet potatoes, peeled and diced
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Directions:
- Preheat oven to 350 degrees F.
- Heat olive oil in a large skillet over medium-high heat. Add the ground turkey and cook until no longer pink, about 8 minutes. Add the onion, carrots, celery, and garlic to the skillet and cook until the vegetables are tender, about 5 minutes.
- Add the chicken broth, thyme, oregano, and rosemary to the skillet and bring to a simmer. Simmer for 10 minutes, stirring occasionally.
- Place the diced sweet potatoes in a greased 9×13 inch baking dish. Pour the turkey mixture over the sweet potatoes and stir to combine. Season with salt and pepper to taste.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and top with shredded cheese if desired. Bake for an additional 10 minutes.
