Vanilla Frosted Blue Velvet Cupcakes

Ingredients:
- 1 1/2 cup all purpose flour
- 1/4 teaspoon baking powder
- 3/4 cup granulated sugar
- 1/3 cup cocoa powder
- 1/2 teaspoon salt
- 1/2 cup (1 stick) butter, melted
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 3/4 cup buttermilk
- 1/2 teaspoon baking soda
- 1 tablespoon white vinegar
- 1 teaspoon blue food coloring
- 1/2 cup (1 stick) butter, softened
- 4 cups powdered sugar
- 1/4 cup heavy cream
- 1 teaspoon pure vanilla extract
Directions:
- Preheat oven to 350°F. Line cupcake pans with paper liners.
- In a medium bowl, whisk together the flour, baking powder, sugar, cocoa powder and salt.
- In a large bowl, whisk together the melted butter, eggs, and vanilla.
- Add the buttermilk and mix until combined.
- Add the dry ingredients and mix until just combined. Do not overmix.
- In a small bowl, whisk together the baking soda and vinegar. Add to the batter and mix until combined. Add the blue food coloring and mix until the desired color is reached.
- Fill the cupcake liners 3/4 full and bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
- Let cupcakes cool completely before frosting.
- In a large bowl, beat the softened butter until smooth. Add the powdered sugar and beat until combined.
- Add the heavy cream and vanilla and beat until light and fluffy. Add more powdered sugar or cream as needed to reach the desired consistency.
- Pipe or spread the frosting onto the cooled cupcakes and enjoy!
