Ingredients:

  • 1 1/2 cup all purpose flour
  • 1/4 teaspoon baking powder
  • 3/4 cup granulated sugar
  • 1/3 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) butter, melted
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 3/4 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1 tablespoon white vinegar
  • 1 teaspoon blue food coloring
  • 1/2 cup (1 stick) butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon pure vanilla extract

Directions:

  1. Preheat oven to 350°F. Line cupcake pans with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, sugar, cocoa powder and salt.
  3. In a large bowl, whisk together the melted butter, eggs, and vanilla.
  4. Add the buttermilk and mix until combined.
  5. Add the dry ingredients and mix until just combined. Do not overmix.
  6. In a small bowl, whisk together the baking soda and vinegar. Add to the batter and mix until combined. Add the blue food coloring and mix until the desired color is reached.
  7. Fill the cupcake liners 3/4 full and bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let cupcakes cool completely before frosting.
  9. In a large bowl, beat the softened butter until smooth. Add the powdered sugar and beat until combined.
  10. Add the heavy cream and vanilla and beat until light and fluffy. Add more powdered sugar or cream as needed to reach the desired consistency.
  11. Pipe or spread the frosting onto the cooled cupcakes and enjoy!
