Ingredients:
- 1 tablespoon olive oil
- 1 large onion, diced
- 1 red bell pepper, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon cayenne pepper
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon sea salt
- 1 (14-ounce) can diced tomatoes, undrained
- 1 (14-ounce) can diced jackfruit, drained
- 1 (14-ounce) can smoked tofu, drained and cubed
- 1 (14-ounce) can vegetable broth
- 1/4 cup chopped fresh parsley
- Cooked rice, for serving
Directions:
- Heat olive oil in a large pot over medium heat. Add onion, bell pepper, celery, and garlic and cook until softened, about 5 minutes.
- Add smoked paprika, oregano, thyme, cayenne, black pepper, and salt and stir to combine. Cook for 2 minutes.
- Add diced tomatoes, jackfruit, smoked tofu, and vegetable broth and stir to combine. Increase heat to high and bring to a boil.
- Reduce heat to low and simmer, uncovered, for 25 minutes, stirring occasionally.
- Stir in parsley and cook for 5 minutes.
- Serve with cooked rice.
