Ingredients:

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 1 red bell pepper, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon sea salt
  • 1 (14-ounce) can diced tomatoes, undrained
  • 1 (14-ounce) can diced jackfruit, drained
  • 1 (14-ounce) can smoked tofu, drained and cubed
  • 1 (14-ounce) can vegetable broth
  • 1/4 cup chopped fresh parsley
  • Cooked rice, for serving

Directions:

  1. Heat olive oil in a large pot over medium heat. Add onion, bell pepper, celery, and garlic and cook until softened, about 5 minutes.
  2. Add smoked paprika, oregano, thyme, cayenne, black pepper, and salt and stir to combine. Cook for 2 minutes.
  3. Add diced tomatoes, jackfruit, smoked tofu, and vegetable broth and stir to combine. Increase heat to high and bring to a boil.
  4. Reduce heat to low and simmer, uncovered, for 25 minutes, stirring occasionally.
  5. Stir in parsley and cook for 5 minutes.
