Vegan Gumbo with Okra and Veggies

This Vegan Gumbo with Okra and Veggies is a delicious comfort dish that will please any vegan. The combination of okra, veggies, and a flavorful broth make this an easy, hearty meal that is sure to be a crowd pleaser.

Ingredients:

  • 1 tablespoon of Olive Oil
  • 1 Onion, chopped
  • 2 cloves of Garlic, minced
  • 1 large red Bell Pepper, chopped
  • 1 teaspoon of Thyme
  • 1 teaspoon of Oregano
  • 1 teaspoon of Paprika
  • 1 teaspoon of Cumin
  • 1 teaspoon of Salt
  • 1 teaspoon of Black Pepper
  • 2 cups of Vegetable Broth
  • 1 (15 ounce) can of diced Tomatoes
  • 1 cup of Okra, sliced
  • 1 cup of frozen Corn
  • 1 cup of frozen Green Beans
  • 1 (15 ounce) can of Kidney Beans, drained and rinsed

Directions:

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, bell pepper, thyme, oregano, paprika, cumin, salt, and black pepper. Cook until the vegetables are softened, about 5 minutes.
  2. Add the vegetable broth, diced tomatoes, okra, corn, and green beans. Bring to a boil, then reduce the heat and simmer for 15 minutes.
  3. Add the kidney beans and simmer for 5 more minutes.
  4. Adjust the seasoning to taste. Serve hot.
  5. Garnish with chopped parsley if desired.
