Vegan Lemon Drizzle Cake with Aquafaba

Ingredients:

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups sugar
  • 3/4 cup vegan butter, melted
  • 1 cup aquafaba
  • 1 teaspoon vanilla extract
  • 1/2 cup freshly squeezed lemon juice
  • 1 tablespoon freshly grated lemon zest
  • 1/4 cup vegan milk
  • 2 tablespoons vegan sugar for topping

Directions:

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch (20 cm) round cake pan with parchment paper.
  2. In a medium bowl, mix together the flour, baking soda, baking powder and salt. Set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, add the sugar and melted vegan butter. Beat on medium speed for 1 minute.
  4. Add the aquafaba and vanilla extract and beat for 1 minute until combined.
  5. Add the lemon juice and lemon zest and beat for 1 minute until combined.
  6. Add half of the flour mixture and beat on low speed until combined. Add the vegan milk and mix until combined.
  7. Add the remaining flour mixture and beat on low speed until combined.
  8. Pour the batter into the prepared cake pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool for 10 minutes, then remove from the pan and let cool completely on a cooling rack.
  10. Sprinkle the top of the cake with the vegan sugar and serve.
