Vegan Lemon Drizzle Cake with Aquafaba

Ingredients:
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups sugar
- 3/4 cup vegan butter, melted
- 1 cup aquafaba
- 1 teaspoon vanilla extract
- 1/2 cup freshly squeezed lemon juice
- 1 tablespoon freshly grated lemon zest
- 1/4 cup vegan milk
- 2 tablespoons vegan sugar for topping
Directions:
- Preheat oven to 350°F (175°C). Grease and line an 8-inch (20 cm) round cake pan with parchment paper.
- In a medium bowl, mix together the flour, baking soda, baking powder and salt. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, add the sugar and melted vegan butter. Beat on medium speed for 1 minute.
- Add the aquafaba and vanilla extract and beat for 1 minute until combined.
- Add the lemon juice and lemon zest and beat for 1 minute until combined.
- Add half of the flour mixture and beat on low speed until combined. Add the vegan milk and mix until combined.
- Add the remaining flour mixture and beat on low speed until combined.
- Pour the batter into the prepared cake pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool for 10 minutes, then remove from the pan and let cool completely on a cooling rack.
- Sprinkle the top of the cake with the vegan sugar and serve.
