Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegan butter, softened
- 1 cup granulated sugar
- 2 teaspoons lemon zest
- 1 teaspoon vanilla extract
- 2/3 cup vegan buttermilk
- For the glaze:
- 2 tablespoons vegan butter, melted
- 1 cup confectioners’ sugar
- 2 tablespoons freshly squeezed lemon juice
Directions:
- Preheat oven to 350°F and grease a 9×13-inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, use an electric mixer to beat together the vegan butter and granulated sugar until light and fluffy. Add in the lemon zest and vanilla extract and mix until combined.
