Vegan Mojito-Flavored Lemon Drizzle Cake

Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup vegan butter, softened
- 1 cup organic sugar
- 1/4 cup fresh lime juice
- 1/4 cup vegan mojito mix
- 2 teaspoons vanilla extract
- 1/2 cup almond milk
- 1/2 cup vegan white chocolate chips
- For the Drizzle:
- 1/4 cup vegan butter
- 1/2 cup organic sugar
- 1/4 cup fresh lime juice
- 1/4 cup vegan mojito mix
Directions:
- Preheat oven to 350°F. Grease a 9-inch round cake pan with vegan butter and set aside.
- In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
- In a large bowl, cream together vegan butter and sugar until light and fluffy. Add the lime juice, vegan mojito mix and vanilla extract and beat until combined.
- Add the dry ingredients to the wet ingredients and mix until just combined. Slowly add the almond milk and mix until combined.
- Fold in the white chocolate chips and pour the batter into the prepared cake pan.
- Bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
- For the Drizzle: In a medium bowl, whisk together vegan butter, sugar, lime juice and vegan mojito mix. Drizzle over the top of the cooled cake and serve.
