Vegan Mojito-Flavored Lemon Drizzle Cake

Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegan butter, softened
  • 1 cup organic sugar
  • 1/4 cup fresh lime juice
  • 1/4 cup vegan mojito mix
  • 2 teaspoons vanilla extract
  • 1/2 cup almond milk
  • 1/2 cup vegan white chocolate chips
  • For the Drizzle:
  • 1/4 cup vegan butter
  • 1/2 cup organic sugar
  • 1/4 cup fresh lime juice
  • 1/4 cup vegan mojito mix

Directions:

  1. Preheat oven to 350°F. Grease a 9-inch round cake pan with vegan butter and set aside.
  2. In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside.
  3. In a large bowl, cream together vegan butter and sugar until light and fluffy. Add the lime juice, vegan mojito mix and vanilla extract and beat until combined.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Slowly add the almond milk and mix until combined.
  5. Fold in the white chocolate chips and pour the batter into the prepared cake pan.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
  7. For the Drizzle: In a medium bowl, whisk together vegan butter, sugar, lime juice and vegan mojito mix. Drizzle over the top of the cooled cake and serve.
