Vegan Niçoise Salad Recipe

Ingredients:
- 1 lb. small potatoes
- 1 lb. green beans, trimmed
- 1 cup cherry tomatoes, halved
- 1 cup Kalamata olives, pitted and halved
- 1/2 cup vegan mayonnaise
- 2 cloves garlic, minced
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
Directions:
- Fill a large pot with cold water and add the potatoes. Bring to a boil and cook until the potatoes are fork-tender, about 15 minutes.
- Drain and set aside to cool.
- In a separate pot, bring a few inches of water to a boil. Add the green beans and cook for 3-5 minutes. Drain and rinse with cool water. Set aside.
