Vegan Niçoise Salad Recipe

Ingredients:

  • 1 lb. small potatoes
  • 1 lb. green beans, trimmed
  • 1 cup cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 1/2 cup vegan mayonnaise
  • 2 cloves garlic, minced
  • 2 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions:

  1. Fill a large pot with cold water and add the potatoes. Bring to a boil and cook until the potatoes are fork-tender, about 15 minutes.
  2. Drain and set aside to cool.
  3. In a separate pot, bring a few inches of water to a boil. Add the green beans and cook for 3-5 minutes. Drain and rinse with cool water. Set aside.
  4. In a salad bowl, combine the potatoes, green beans, tomatoes, and olives.
  5. In a separate bowl, whisk together the mayonnaise, garlic, vinegar, olive oil, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
