Vegan Ratatouille with Chickpeas and Olives

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced

  • 1 zucchini, diced
  • 1 eggplant, diced
  • 1 can (14-ounce) diced tomatoes
  • 1 can (14-ounce) chickpeas, drained and rinsed
  • 1/2 cup pitted Kalamata olives, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Directions:

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and bell pepper and cook until softened, about 5 minutes.
  3. Add the garlic and cook for 1 minute.
  4. Add the zucchini and eggplant and cook for 5 minutes, stirring occasionally.
