Ingredients:
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 clove garlic, minced
- 1 red bell pepper, diced
- 1 cup mushrooms, chopped
- 1 (14-ounce) can diced tomatoes
- 1/2 cup vegan beef-less crumbles
- 2 tablespoons tomato paste
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 2 tablespoons nutritional yeast
- Salt and pepper, to taste
- 1 pound spaghetti, cooked according to package instructions
Directions:
- Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, and bell pepper and cook until softened, about 5 minutes.
- Add the mushrooms and cook until softened, about 5 minutes more.
- Add the diced tomatoes, beef-less crumbles, tomato paste, Italian seasoning, red pepper flakes, nutritional yeast, salt, and pepper. Stir to combine and let cook for 5 minutes.
- Add the cooked spaghetti to the pan and stir to combine. Cook for 5 minutes more.
