Vegetarian Chili

Ingredients:

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste

Instructions:

  1. In a large pot or Dutch oven, cook the onion and garlic over medium-high heat until softened, about 5 minutes.
  2. Add the bell peppers and cook for another 5 minutes.
  3. Add the beans, tomatoes, chili powder, cumin, salt, and pepper, and stir to combine.
  4. Bring the chili to a boil, then reduce the heat and let it simmer for at least 30 minutes to allow the flavors to meld.
  5. Serve hot with your favorite toppings, such as grated cheese, sour cream, and chopped fresh cilantro.
