  • 3 large eggs
  • 1/4 cup diced bell peppers (any colour)
  • 1/4 cup sliced mushrooms
  • 1/4 cup diced onions
  • 1/4 cup chopped spinach
  • Salt and pepper to taste
  • 1 tablespoon olive oil

  1. Crack the eggs into a bowl and whisk them until well beaten. Season with salt and pepper.
