Wholesome Banana Bread with Oats and Greek Yogurt

Ingredients:

  • 3 large ripe bananas
  • 1 cup rolled oats
  • 1 cup Greek yogurt
  • 1/4 cup maple syrup
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 cup chopped walnuts (optional)

Directions:

  1. Preheat oven to 350°F and lightly spray a 9×5 inch loaf pan with cooking spray.
  2. In a medium bowl, mash the bananas with a fork.
  3. Add the oats, Greek yogurt, maple syrup, baking soda, vanilla extract, salt, cinnamon, nutmeg, and ginger. Mix until fully combined.
  4. Fold in the walnuts, if using.
  5. Pour the batter into the prepared loaf pan and spread evenly.
