Wild Game and Pumpkin Ravioli

Ingredients:
- 1 teaspoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup ground wild game (venison, elk, etc.)
- 1/2 teaspoon each, dried oregano, thyme, and basil
- 1/4 teaspoon black pepper
- 1/2 cup pumpkin puree
- 1/4 cup ricotta cheese
- 2 tablespoons grated Parmesan cheese
- 1 package (18-20 ounces) fresh or frozen ravioli
- 1/2 cup chicken broth
- 2 tablespoons butter
- Salt to taste
- Grated Parmesan cheese for garnish
Directions:
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for 2-3 minutes, until the onion is softened.
- Add the wild game to the skillet and cook, breaking it up with a spoon, until it is cooked through. Add the oregano, thyme, basil, and pepper and stir to combine.
- Add the pumpkin puree, ricotta cheese, and Parmesan cheese and stir to combine. Cook for 2-3 minutes, until the cheese is melted and the mixture is heated through.
- Meanwhile, bring a large pot of salted water to a boil. Add the ravioli and cook according to the package instructions. Drain and set aside.
- Add the chicken broth and butter to the skillet and stir to combine. Simmer for 2-3 minutes, until the sauce is thickened.
- Add the cooked ravioli to the skillet and toss to combine. Simmer for 1-2 minutes, until the ravioli are heated through.
