Wild Game and Pumpkin Ravioli

Ingredients:

  • 1 teaspoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup ground wild game (venison, elk, etc.)
  • 1/2 teaspoon each, dried oregano, thyme, and basil
  • 1/4 teaspoon black pepper
  • 1/2 cup pumpkin puree
  • 1/4 cup ricotta cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 package (18-20 ounces) fresh or frozen ravioli
  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • Salt to taste
  • Grated Parmesan cheese for garnish

Directions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook for 2-3 minutes, until the onion is softened.
  2. Add the wild game to the skillet and cook, breaking it up with a spoon, until it is cooked through. Add the oregano, thyme, basil, and pepper and stir to combine.
  3. Add the pumpkin puree, ricotta cheese, and Parmesan cheese and stir to combine. Cook for 2-3 minutes, until the cheese is melted and the mixture is heated through.
  4. Meanwhile, bring a large pot of salted water to a boil. Add the ravioli and cook according to the package instructions. Drain and set aside.
  5. Add the chicken broth and butter to the skillet and stir to combine. Simmer for 2-3 minutes, until the sauce is thickened.
  6. Add the cooked ravioli to the skillet and toss to combine. Simmer for 1-2 minutes, until the ravioli are heated through.
