This Wild Mushroom Beef Stroganoff is an incredibly flavorful and comforting dish. It’s made with juicy beef chunks, wild mushrooms, and a creamy sauce. Serve it over cooked egg noodles for a delicious and satisfying dinner.

Ingredients:

– 1 pound of beef chuck roast, cut into 1-inch cubes
– 2 tablespoons of olive oil
– 2 cloves of garlic, minced
– 1 shallot, minced
– 1 cup of wild mushrooms, sliced
– 1 tablespoon of tomato paste
– ¼ cup of dry white wine
– ½ cup of beef broth
– 1 teaspoon of Worcestershire sauce
– 2 tablespoons of sour cream
– 2 tablespoons of butter
– 2 tablespoons of freshly chopped parsley
– Salt and pepper, to taste
– Cooked egg noodles, for serving

Directions:

1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the beef cubes and season with salt and pepper. Cook until browned, about 8 minutes.
3. Add the garlic, shallot, and mushrooms and cook for an additional 5 minutes.
4. Stir in the tomato paste and cook for an additional minute.
5. Pour in the white wine and cook for 2 minutes.
6. Add the beef broth and Worcestershire sauce and bring to a simmer.
7. Reduce the heat to low and simmer for 15 minutes.
8. Stir in the sour cream, butter, and parsley and simmer for an additional 5 minutes.
9. Serve the stroganoff over cooked egg noodles. Enjoy!
