Caramelised Banana Mochi Waffles
This decadent dessert combines the rich sweetness of caramelised bananas with the crunchy texture of mochi waffles. Ingredients:
- 2 large firm bananas, peeled and sliced
- 2 tablespoons of butter
- 1/4 cup light brown sugar
- 1 cup mochiko flour
- 3/4 cup milk
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Directions:
- Melt butter in a large skillet over medium heat. Add the sliced bananas and cook for 2 minutes, stirring frequently.
- Stir in the light brown sugar and continue to cook for 1 minute, stirring frequently.
- Remove the pan from the heat and set aside.
- In a medium bowl, combine the mochiko flour, milk, eggs, baking powder, vanilla extract and salt and whisk until all ingredients are well combined.
- Grease a waffle iron with non-stick cooking spray.
- Scoop 1/3 cup of the mochi batter onto the waffle iron and spread evenly. Top with some of the caramelised bananas and close the iron. Cook for 3-4 minutes until golden brown and crispy.
- Repeat with the remaining batter and bananas.
- Serve the waffles hot with a scoop of ice cream or a dollop of whipped cream.
