Caramelised Banana Mochi Waffles

This decadent dessert combines the rich sweetness of caramelised bananas with the crunchy texture of mochi waffles. Ingredients:

  • 2 large firm bananas, peeled and sliced
  • 2 tablespoons of butter
  • 1/4 cup light brown sugar
  • 1 cup mochiko flour
  • 3/4 cup milk
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Directions:

  1. Melt butter in a large skillet over medium heat. Add the sliced bananas and cook for 2 minutes, stirring frequently.
  2. Stir in the light brown sugar and continue to cook for 1 minute, stirring frequently.
  3. Remove the pan from the heat and set aside.
  4. In a medium bowl, combine the mochiko flour, milk, eggs, baking powder, vanilla extract and salt and whisk until all ingredients are well combined.
  5. Grease a waffle iron with non-stick cooking spray.
  6. Scoop 1/3 cup of the mochi batter onto the waffle iron and spread evenly. Top with some of the caramelised bananas and close the iron. Cook for 3-4 minutes until golden brown and crispy.
  7. Repeat with the remaining batter and bananas.
  8. Serve the waffles hot with a scoop of ice cream or a dollop of whipped cream.
