Zucchini Noodle Bolognese with Low-Carb Spaghetti

This delicious meat-free dinner dish is a healthier alternative to traditional spaghetti bolognese, using zucchini noodles and a low-carb spaghetti alternative. The vegan-friendly bolognese sauce is made with a medley of vegetables, herbs, and spices, providing a rich, flavorful sauce that pairs perfectly with the zucchini noodles.

Ingredients:

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 1/4 cup red wine
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons vegan Worcestershire sauce
  • 1/4 cup nutritional yeast
  • 1 (12-ounce) package low-carb spaghetti
  • 2 zucchini, spiralized into noodles
  • Fresh basil, for garnish

Directions:

  1. Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, bell pepper, carrots, and celery and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  2. Add the zucchini, oregano, basil, thyme, red pepper flakes, salt, and black pepper and cook, stirring occasionally, until the vegetables are softened, about 5 minutes more.
  3. Add the diced tomatoes, tomato sauce, red wine, balsamic vinegar, Worcestershire sauce, and nutritional yeast and stir to combine. Simmer over low heat for 10 minutes.
  4. Meanwhile, bring a large pot of salted water to a boil. Add the low-carb spaghetti and cook according to package instructions.
  5. When the spaghetti is finished cooking, drain it and return it to the pot. Add the zucchini noodles and stir to combine.
  6. Add the bolognese sauce and stir to combine. Simmer over low heat for 3-5 minutes.
  7. Serve the bolognese over the zucchini noodles, garnished with fresh basil if desired.
