Zucchini Noodle Bolognese with Low-Carb Spaghetti
This delicious meat-free dinner dish is a healthier alternative to traditional spaghetti bolognese, using zucchini noodles and a low-carb spaghetti alternative. The vegan-friendly bolognese sauce is made with a medley of vegetables, herbs, and spices, providing a rich, flavorful sauce that pairs perfectly with the zucchini noodles.
Ingredients:
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14-ounce) can diced tomatoes
- 1 (8-ounce) can tomato sauce
- 1/4 cup red wine
- 2 tablespoons balsamic vinegar
- 2 tablespoons vegan Worcestershire sauce
- 1/4 cup nutritional yeast
- 1 (12-ounce) package low-carb spaghetti
- 2 zucchini, spiralized into noodles
- Fresh basil, for garnish
Directions:
- Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, bell pepper, carrots, and celery and cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
- Add the zucchini, oregano, basil, thyme, red pepper flakes, salt, and black pepper and cook, stirring occasionally, until the vegetables are softened, about 5 minutes more.
- Add the diced tomatoes, tomato sauce, red wine, balsamic vinegar, Worcestershire sauce, and nutritional yeast and stir to combine. Simmer over low heat for 10 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add the low-carb spaghetti and cook according to package instructions.
- When the spaghetti is finished cooking, drain it and return it to the pot. Add the zucchini noodles and stir to combine.
- Add the bolognese sauce and stir to combine. Simmer over low heat for 3-5 minutes.
- Serve the bolognese over the zucchini noodles, garnished with fresh basil if desired.
